The soy sauce adds great flavor to the chicken, even though it is only briefly dipped in it. It is amazing how such a simple dish can provide such great flavor.
Zesty Crisp Chicken
Ingredients:
- 2 boneless skinless chicken breasts
- 1 egg, slightly beaten
- 1/4 cup low sodium soy sauce
- 1 cup panko bread crumbs
Directions:
- Preheat oven to 350º F. Place a cooling rack sprayed with cooking spray on a baking sheet.
- Cut chicken breasts in half horizontally, making four chicken breasts.
- In a shallow bowl combine the egg and soy sauce.
- Place the panko in another shallow bowl.
- Dip chicken breasts into the egg soy sauce mixture and then coat with panko.
- Place chicken breasts on prepared cooling rack and bake for 20 minutes or until chicken is completely cooked.
