When I am done using up all of the frozen bananas in my freezer I will probably have about a million banana bread recipes. Well, maybe not quite a million, but I will have a lot. But that is okay, my family likes banana bread and I like making it many different ways.
Tropical Banana Bread
Ingredients:
- 3 cups all purpose flour
- 2 cups granulated sugar
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 3 eggs
- 2 teaspoons vanilla extract
- 1 cup unsweetened applesauce
- 2 cups mashed bananas, about 4-5
- 1 cup shredded sweetened coconut
- 1- 8 ounce can crushed pineapple, drained and juice reserved
- 1 cup powdered sugar
Directions:
- Preheat oven to 350º F. Spray two loaf pans with cooking spray. Set aside.
- In a large bowl combine the flour, sugar, cinnamon and baking soda.
- In another bowl mix together the eggs, applesauce and vanilla. Add in the bananas, coconut and pineapple.
- Pour the wet ingredients into the dry and mix until just combined.
- Pour batter evenly into the two prepared loaf pans.
- Bake for 65-75 minutes or until an inserted toothpick comes out clean.
- Let bread cool in pans for 10 minutes.
- Remove from pans and allow to cool slightly on a cooling rack.
- In a small bowl combine the powdered sugar and just enough pineapple juice to reach desired consistency.
- Pour over slightly warm bread.
