Tropical Banana Bread

Tropical Banana Bread: Savory Sweet and Satisfying

When I am done using up all of the frozen bananas in my freezer I will probably have about a million banana bread recipes. Well, maybe not quite a million, but I will have a lot. But that is okay, my family likes banana bread and I like making it many different ways.

Tropical Banana Bread: Savory Sweet and Satisfying

Tropical Banana Bread

Ingredients:

  • 3 cups all purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 cup unsweetened applesauce
  • 2 cups mashed bananas, about 4-5
  • 1 cup shredded sweetened coconut
  • 1- 8 ounce can crushed pineapple, drained and juice reserved
  • 1 cup powdered sugar

Directions:

  1. Preheat oven to 350º F. Spray two loaf pans with cooking spray. Set aside.
  2. In a large bowl combine the flour, sugar, cinnamon and baking soda.
  3. In another bowl mix together the eggs, applesauce and vanilla. Add in the bananas, coconut and pineapple.
  4. Pour the wet ingredients into the dry and mix until just combined.
  5. Pour batter evenly into the two prepared loaf pans.
  6. Bake for 65-75 minutes or until an inserted toothpick comes out clean.
  7. Let bread cool in pans for 10 minutes.
  8. Remove from pans and allow to cool slightly on a cooling rack.
  9. In a small bowl combine the powdered sugar and just enough pineapple juice to reach desired consistency.
  10. Pour over slightly warm bread.
