I have to admit I have never made chicken noodle soup. I have a few pinned on my Pinterest board, but have never made any of them, until now.
I was looking for a soup and a way to use up some heavy cream and celery. It turned out this recipe was just what I needed to use up both the cream and celery. I love it when things work out like that.
This soup is so very yummy. It is a delicious chicken noodle soup with some cream added to it to make it even better. A great twist on a classic soup.
Creamy Chicken Noodle Soup
Ingredients:
- 1 1/2 tablespoon olive oil
- 1 1/2 cups chopped yellow onion
- 1 1/2 cups chopped carrots
- 1 1/2 cups chopped celery
- 3 cloves garlic, minced
- 32 ounces low sodium chicken broth
- 1 1/2 tablespoons dried parsley
- 2 bay leaves
- black pepper, to taste
- 1 pound boneless skinless chicken breasts
- 2 1/2 cups uncooked medium egg noodles
- 1/4 cup unsalted butter
- 1/4 cup + 2 tablespoons all purpose flour
- 2 1/2 cups milk
- 1/2 cup heavy cream
Directions:
- In a large pot heat 1 1/2 tablespoons olive oil over medium heat.
- Add in onions, carrots and celery. Sauté for 3-4 minutes or until vegetables are tender.
- Add in garlic and sauté for 1 more minutes.
- Add in chicken broth, parsley, bay leaves and pepper (to taste).
- Add in chicken breasts, increase heat to medium high and bring to a boil. Cover pot with a lid, reduce heat to medium and cook for 10-15 minutes or until chicken is completely cooked.
- Remove chicken and allow to rest for 5 minutes, then shred and return to pot.
- While chicken is cooking, prepare noodles according package directions and drain.
- While noodles are cooking, melt butter in a medium saucepan over medium heat.
- Add in flour and cook, stirring constantly, for 1 minute.
- Slowly whisk in milk and continue to whisking until mixture is smooth and lump free.
- Whisk in the cream and bring mixture to a boil, stirring constantly.
- Add milk mixture and noodles to the soup pot and stir to mix.
