These muffins are not only full of banana flavor but nice and moist as well. The cream cheese frosting is the perfect topping for these muffins making them even better.
Banana Muffins with Cream Cheese Frosting
Ingredients:
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 cups granulated sugar
- 1 cup vegetable oil
- 3 eggs
- 1 tablespoon vanilla extract
- 4 ripe bananas, mashed
- 8 ounces reduced fat cream cheese, room temperature
- 6 tablespoons unsalted butter, room temperature
- 3 tablespoons honey
- Preheat oven to 325º F. Line 18 muffin cups with paper liners or spray well with cooking spray.
- In a medium bowl whisk together the flour, baking soda and baking powder.
- In a large bowl beat together the sugar, oil, eggs and vanilla. Stir in the mashed bananas.
- Add in the dry ingredients and stir until just blended.
- Divide the batter between the prepared muffin cups.
- Bake the muffins for 20-25 minutes or until the tops are golden brown and an inserted toothpick comes out clean.
- Cool muffins in tin for 5 minutes. Transfer muffins to a cooling rack and cool completely.
- While muffins are cooling make cream cheese frosting by beating the cream cheese and butter together in a large bowl. Beat in the honey.
- Spread the frosting on cooled muffins.
