Cheesy Honey Mustard Chicken



Honey and mustard are such a delicious and I think classic combination.  Adding bacon and cheese to that combination just adds even more deliciousness.


Normally I eat only half a chicken breast since they are so large, but this time I ended up going back for more, because this chicken is so very good!

Cheesy Honey Mustard Chicken

Ingredients:

  • 4 boneless skinless chicken breasts
  • black pepper, to taste
  • 3/4 cup honey
  • 1/2 cup dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon paprika
  • 1/4 cup cooked and crumbled bacon
  • 1 cup shredded mozzarella cheese

Directions:

  1. Preheat the oven to 375º F.
  2. Season both sides of the chicken with black pepper and place into a 9x13 inch baking dish.
  3. In a small bowl whisk together the honey, mustard, lemon juice and paprika. Pour this mixture over the chicken breasts.
  4. Bake for 20-25 minutes or until the chicken is almost cooked through.
  5. Top each chicken breast with equal portions of bacon and cheese, about 1 tablespoon of bacon and 1/4 cup cheese.
  6. Bake for an additional 10 minutes or until the the cheese is starting to brown and chicken is completely cooked.
