I always make my overnight oats in mason jars, like the one in the picture. The problem with these overnight oats is that with the topping it does not all fit in the jar. I squeezed as much as I could on top for the picture, but then had to dumped it all out in a bowl to and add the rest of the topping and then stir. I guess that is not really a big problem just a minor inconvenience. Two dirty containers instead of one, but once I had my first bite, I really did not care. These overnight oats are delicious, super creamy and full of coconut flavor, with a nice crunch from the almonds.
Coconut Cream Pie Overnight Oats
Ingredients:
- 1/2 cup old fashioned oats
- 1/2 cup milk
- 1/4 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 3/4 cup coconut Greek yogurt
- 2 tablespoon shredded coconut
- 2 tablespoons sliced almonds
Directions:
- In a large mason jar or container add the oats, milk, cinnamon and then the vanilla. Stir everything together. Top with the greek yogurt, cover and refrigerate overnight.
- Heat a dry skillet over medium heat. Add in the coconut and almonds. Cook stirring often until the coconut is golden and the almonds are toasted, about 3-5 minutes. This can be done the night you prepare the oats or in the morning.
- Top the overnight oats with the toasted coconut and the toasted almonds. Stir everything together.
