These banana muffins were amazing! The first time I made them the cream cheese filling did not work out just quite right. However the flavor and texture of the banana muffins was so amazing, that I knew I needed to try again and I am so glad I did. Delicious banana muffins with a yummy cream cheese center.
Banana Cream Cheese Muffins
Ingredients:
- 6 tablespoons unsalted butter, room temperature
- 4 ounces cream cheese, room temperature
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 2 bananas, mashed
- 6 ounces cream cheese, room temperature
- 1 tablespoon all purpose flour
- 1 tablespoon granulated sugar
- 1 egg
- 1 teaspoon vanilla extract

Cream Cheese Filling
Directions:
- Preheat oven to 350º F. Spray a muffin tin with cooking spray or use line with liners.
- In a large bowl, with an electric mixer or stand mixer, cream together the butter, cream cheese and sugar. Add in the egg and vanilla and beat until well combined. Add in the flour, baking powder, baking soda, cinnamon and mashed banana. Mix just until combined, do not over mixed.
Banana Muffins
- In a medium bowl, using an electric mixer beat the cream cheese until smooth. Add in the egg and beat until mixed. Add in the flour, sugar and vanilla, mix until smooth.
- Using a 1 tablespoon measure, scoop out some batter and place into the prepared muffin tin. Fill each cup with 1 tablespoon of batter. Make a well in the batter and then fill with about 3/4 a tablespoon of cream cheese filling, using all of the filling. Evenly divide the remaining batter and place on top of the cream cheese filling. Gently spread the batter out covering the cream cheese filling.
- Bake for 20-25 minutes or until the muffins are completely baked.
