Breakfast Quesadilla

Breakfast Quesadilla: Savory Sweet and Satisfying

I have made quesadillas before, but have never thought about turning it into a breakfast variety. This quesadilla is filled with crispy bacon, scrambled eggs and of course cheese.

Breakfast Quesadilla

Ingredients:

  • 6 slices bacon
  • 6 eggs
  • black pepper, to taste
  • 8 ounces shredded cheddar cheese
  • 8 flour tortillas

Directions:

  1. In a large skillet over medium heat cook the bacon until crisp. Remove from the skillet and place on a paper towel lined plate. When cool crumble. Leave a little bit of bacon grease in the pan and discard the rest.
  2. In a medium bowl whisk together the eggs and season with black pepper. Pour the eggs into the skillet with the bacon grease and scrambled until cooked.
  3. Sprinkle a little bit of cheese on one of the tortillas and top with 1/4 of the eggs and 1/4 of the bacon. Top with a little bit more cheese and place another tortilla on top. Carefully place the tortilla into the skillet and cooke, over medium heat, until the tortilla is golden and the cheese begins to melt. Carefully flip the quesadilla over and cook on the other side until tortilla is golden and cheese is melted. Repeat with the remaining tortillas.

Notes:
 I used turkey bacon in these quesadillas.
