When life gets chaotic a simple and easy dinner is just what I need. But that dinner also needs to be delicious and this dish definitely is. It is a creamy, cheesy and spicy pasta goodness.
Buffalo Chicken Pasta
Ingredients:
- 8 ounces penne pasta
 - 8 ounces cream cheese, softened
 - 3/4 cup ranch dressing
 - 1/3 cup Frank's hot sauce
 - 2 cups cooked, shredded chicken
 - 1 1/2 cups shredded mozzarella cheese
 - 1/2 cup shredded cheddar cheese
 - chopped green onions, optional
 
Directions:
- Preheat the oven to 375º F. Spray a 8 inch casserole dish with cooking spray.
 - Cook the pasta according to the package directions and drain.
 - In a large bowl combine the cream cheese, ranch dressing and hot sauce until well combined. Add in the chicken, 1/2 cup mozzarella cheese and cooked pasta. Stir until everything is well combined.
 - Transfer the mixture to the prepared baking dish and top with the remaining mozzarella and all of the cheddar cheese.
 - Bake for 20 minutes, or until the cheese is melted and everything is warmed through. Garnish with sliced green onions if desired.
