Any time I come across a recipe that has key lime in the title I get excited. Key lime pie is one of my favorite desserts, and I love using that flavor in any other recipe I can, like these pancakes.
Now, I know some will say these are not key lime pancakes, because limes are used not key limes, but key limes are hard to find where I live and limes work as a great substitute. However, if you are lucky enough to live where you can easily find key limes they feel free to use those in place of the limes, but you will need more than the recipe states for limes.
Wether you use limes or key limes, these pancakes are delicious and have great flavor. What a good way to start they day.
Key Lime Pancakes
Ingredients:
- 1 cup milk
- 7 ounces plain Greek yogurt
- 2 tablespoons fresh lime juice
- 1 1/4 cups all purpose flour
- 3/4 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 1 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3 tablespoons olive oil
- 2 eggs
- 2 limes zested
- 1/2 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1/8 teaspoon vanilla extract
- 1 lime zested

Whipped Cream
Directions:
- In a large bowl, whisk together the milk, Greek yogurt and lime juice. Set aside.
- In another large bowl, combine the flour, graham crackers crumbs, sugar, baking powder and baking soda.
- Heat up the griddle.
- To the wet ingredients, whisk in the olive oil, eggs and lime zest. Sift a 1/3 of the flour mixture into the wet ingredients and gently stir to combine. Repeat the process until all of the flour has been incorporated and the batter is thick and slightly lumpy.
- Lightly grease the griddle.
- Using a 1/3 cup measuring cup, scoop out the batter and pour onto the griddle. Cook until bottom is lightly browned and bubbles start to form and pop on the top of the pancakes. Flip the pancake and cook until lightly browned on the other side.
Pancakaes
- In a medium bowl whisk together the heavy cream, powdered sugar, vanilla extract and lime zest until stiff peaks form.
- Serve the whipped cream on top of the pancakes.
