This pasta dish tastes just like it sounds. Creamy fettuccine Alfredo with buffalo sauce mixed in and then topped with crispy chicken strips. An absolutely delicious pasta with a little spicy kick from the buffalo sauce. I can not wait to make this dish again!
Buffalo Fettuccine Alfredo with Chicken
Ingredients:
- 16 ounces fettuccine noodles
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts
- 1 egg, lightly beaten
- 2 tablespoons milk
- 3/4 cup Italian bread crumbs
- 2 tablespoons unsalted butter
- 1 cup half and half
- 3 ounces mascarpone cheese
- 1/2 cup buffalo sauce
- 1/2 cup shredded parmesan cheese
Direction:
- Cook the pasta according to the package directions and drain well.
- While the pasta cooks, whisk together the eggs and milk in a shallow bowl.
- In a separate shallow bowl add the bread crumbs.
- Cut the chicken into strips.
- Heat the oil in a large skillet, over medium heat.
- Coat the chicken with the milk and egg mixture, then place in the bread crumbs and coat well, press down to make sure it sticks.
- Place the dredged chicken into the hot skillet and cook for 6-8 minutes, or until browned to your liking. Turn the chicken over and cook on the other side for 6-8 minutes, or until completely cooked and browned to your liking.
- Remove the chicken and keep warm.
- To the same skillet, melt the butter.
- Slowly stir in the half and half.
- Add in the mascarpone cheese and stir until melted and completely incorporated.
- Stir in the buffalo sauce and then the parmesan cheese. Let the sauce cook for about 1 minute to thicken and for the cheese to melt.
- Add the pasta to the sauce and stir well to coat.
- Serve the chicken over top of the noodles.
Notes:
I used my Homemade Buffalo Sauce in this dish.
You may need more bread crumbs depending on the size and amount of chicken.
