Most people I know like their apple pie with vanilla ice cream on the side, my husband however likes his apple pie in a bowl with some milk. I don't get it or think it would taste good, but it made me think about putting the flavors of apple pie into an ice cream.
I am glad I made this ice cream. It tastes like apple pie and ice cream, all combined in one bowl.
Apple Pie Ice Cream
Ingredients:
- 2 granny smith apples, peeled, cored and chopped
- 1 tablespoon unsalted butter
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 tablespoon brown sugar
- 1- 9 inch unbaked pie crust
- 3 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- 1 tablespoon unsalted butter, melted
- 2 cups half and half
- 1 1/4 cups heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract

Directions:
- Place freezer safe container, for storing the ice cream, in the freezer.
- In a medium saucepan, melt the butter over medium heat.
- Add in the apples and stir to mix. Add in the cinnamon and nutmeg, stirring to mix.
- Cook for about 10 minutes or until the apples begin to soften. Stir occasionally and lower heat if the apples begin to burn.
- Add in the brown sugar, stir to mix and cook for 2-3 minutes, or until the apples are softened.
- Remove from the heat and cool completely.
- Transfer to a storage container with a lid and refrigerate until cold.

- Preheat oven to 350º F. If using a homemade pie dough roll it out into about a 9 inch circle. Transfer the dough to a baking sheet lined with parchment paper or a silpat.
- Combine the granulated sugar and cinnamon in a small bowl.
- Brush one side of the pie crust with melted butter and then sprinkle with cinnamon sugar mixture. Carefully flip over the pie crust and brush the other side with melted butter and remaining cinnamon sugar mixture.
- Bake for 10-20 minutes or until the pie crust is crispy.
- Cool completely, then break into bite sized pieces and set aside.
