Loaded Cauliflower and Chicken Casserole: Savory Sweet and Satisfying

Steamed cauliflower loaded with chicken, cheese and bacon creates a delicious casserole. One that I will be making again and again.

Loaded Cauliflower and Chicken Casserole

Ingredients:

  • 2 boneless skinless chicken breasts, cooked and cubed
  • 1 head cauliflower
  • 8 ounces sharp cheddar cheese, shredded
  • 8 ounces Monterey Jack cheese, shredded
  • 1 bundle green onions, sliced
  • 4 slices turkey bacon
  • 1/8 teaspoon garlic powder
  • black pepper, to taste

Directions:

  1. Preheat oven to 350º F. Lightly grease a 9x13 baking dish.
  2. Steam the cauliflower until tender.
  3. In a large bowl combine both cheeses. Remove 1/4 cup of cheese and set aside.
  4. To the cheese add the cooked cubed chicken, green onions, bacon and garlic powder. Stir to combine.
  5. Add the cauliflower to the bowl and stir to combine. Season with black pepper.
  6. Transfer the mixture to the prepared baking dish and top with the reserved cheese.
  7. Cover with foil and bake for 25 minutes.
  8. Remove the foil and bake for 5 more minutes.
