Asiago Potato Soup

Asiago Potato Soup: Savory Sweet and Satisfying

This soup is an unique but delicious soup. The base is a creamy potato soup, but then it is loaded with asiago cheese and some bacon. The asiago cheese flavor really comes through giving this soup a nice cheese flavor.

Asiago Potato Soup

Ingredients:

  • 3 cups chopped yellow onion
  • 1 cup chopped celery
  • 3 cups chopped carrots
  • 6 tablespoon unsalted butter
  • 4 cups chopped and peeled russet potatoes, bite sized pieces
  • 1 cup white wine
  • 2 cups low sodium chicken stock
  • 2 cups half and half
  • 2 cups shredded asiago cheese
  • 6 slices turkey bacon, cooked and crumbled

Directions:

  1. In a large pot melt the butter, over medium-high heat.
  2. Add in the onions, celery and carrots, cook, stirring occasionally until tender.
  3. Add in the potatoes, wine and chicken stock.
  4. Cover the pot and cook for 20 minutes or until the potatoes are tender.
  5. Use an immersion blender or transfer to a blender and puree until mixture is smooth.
  6. To the soup in the pot add in the half and half and cook for 5 minutes.
  7. Remove from the heat and add in the cheese, stirring until melted.
  8. Top each serving with bacon.
