Baked Snickerdoodle Doughnuts

Baked Snickerdoodle Doughnuts: Savory Sweet and Satsifying

I have tried making snickerdoodle cookies many times and every time they turn out good, but they are as flat as a pancake. I have searched and tried every tip and trick I have found, but they still turn out flat as a pancake. So, for the time being I have given up with making snickerdoodle cookies.

Now enter snickerdoodle doughnuts. These I made once and they came out perfect. So when ever I feel the need for the flavor of a snickerdoodle cookie I will just make these snickerdoodle doughnuts.

Baked Snickerdoodle Doughnuts

Ingredients:

  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon, divided
  • 2 tablespoon unsalted butter, melted
  • 2 egg, room temperature
  • 2 teaspoon vanilla extract
  • 1/2 teaspoon butter extract
  • 1 1/2 cups granulated sugar, divided
  • 3/4 cups fat free milk, divided

Directions:

  1. Preheat oven to 350º F. Spray a mini muffin tin with cooking spray.
  2. In a large bowl whisk together the flour, baking soda, and 1/2 teaspoon cinnamon.
  3. In a medium bowl whisk together the melted butter, eggs and both extracts.
  4. Stir in 1/2 cup sugar and 1/2 cup milk.
  5. Pour the wet ingredients into the dry ingredients and stir just until mixed.
  6. Fill each cup of the prepared muffin tin about 3/4 full with batter.
  7. Bake for 8-12 minutes or until an inserted toothpick comes out clean.
  8. While the doughnuts are baking combine the remaining 1 cup sugar and 1 teaspoon cinnamon in a small bowl.
  9. Pour the remaining 1/4 cup milk into another small bowl.
  10. When the doughnuts are done remove them to a cooling rack and let them cool.
  11. Dip the doughnuts into the milk and then roll in the cinnamon sugar mixture until well coated. Place back on the cooling rack. If you are not planning on serving and eating the doughnuts right away, store the doughnuts plain and dip in milk and roll in the cinnamon sugar mixture when ready to eat.
