I always seem to have leftover bananas in my freezer, but it is not often that I have leftover cranberries there too. Typically if I buy cranberries they get used up pretty quickly. So I was surprised when I found some in my freezer. So I went on a search of how to use up those deliciously tart cranberries.
When I found a recipe that not only used up the cranberries but some of the bananas as well I was sold. The tart cranberries and sweet banana bread pair so well together.
Banana Cranberry Bread
Ingredients:
- 1 cup cranberries
- 2 tablespoons granulated sugar
- 2 tablespoons water
- 1 1/4 cups all purpose flour
- 3/4 teaspoons baking soda
- 2 tablespoons unsalted butter, softened
- 1/2 cup brown sugar
- 2 egg whites
- 3 medium ripe bananas, lightly mashed
- 1 1/2 teaspoons vanilla extract
Directions:
- Preheat oven to 350º F. Lightly spray a loaf pan with cooking spray snd set aside.
- In a small saucepan combine the cranberries, water and sugar. Bring to a boil then simmer over medium heat until the cranberries burst, about 4 minutes.
- In a medium bowl whisk together the flour and baking soda.
- In a large bowl, cream together the butter and brown sugar, using either a hand mixer or stand mixer.
- Add in the egg whites, bananas and vanilla. Beat on medium speed until everything is well mixed.
- Add the flour mixture to the wet mixture and beat on low speed just until everything is incorporated, do not over mix.
- Fold in the cranberries.
- Pour the batter into the prepared loaf pan.
- Bake for 60 minutes or until an inserted toothpick comes out clean.
- Place the pan on a cooling rack and let cool for at least 25 minutes.
- Remove the bread from the pan and cool until room temperature before slicing.
Notes:
The cranberries can be fresh or frozen. If using frozen do not thaw, just add the frozen cranberries to the saucepan and proceed with the directions.
