I have always been a fan of coffee cakes and muffins. So the idea of a coffee cake muffin is prefect for me.
These coffee cake muffins are full of flavor. They not only have egg nog in the muffin, but there is an egg nog glaze drizzled on top. There is also a delicious streusel topping not just on the top but in the middle as well.
Eggnog Coffee Cake Muffins
Ingredients:
Streusel Topping
- 1/2 cup all purpose flour
- 1/2 cup light brown sugar
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 5 tablespoons unsalted butter, cut into small pieces
Muffins
- 2 cups all purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/8 teaspoon ground nutmeg
- 1 cup eggnog, room temperature
- 1 egg, room temperature
- 5 tablespoon unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
Glaze
- 2/3 cup powdered sugar
- 2 tablespoons egg nog
Directions:
- Preheat oven to 350º F. Line a muffin tin with paper liners or spray with cooking spray. Set aside.
Streusel Topping
- In a medium bowl combine the flour, brown sugar, cinnamon and nutmeg. Cut in the butter until it resembles coarse crumbs. Set aside.
