Egg Nog Coffee Cake Muffins

Egg Nog Coffee Cake Muffins: Savory Sweet and Satisfying

I have always been a fan of coffee cakes and muffins. So the idea of a coffee cake muffin is prefect for me.

These coffee cake muffins are full of flavor. They not only have egg nog in the muffin, but there is an egg nog glaze drizzled on top. There is also a delicious streusel topping not just on the top but in the middle as well.

Egg Nog Coffee Cake Muffins

Streusel Topping
1/2 cup all purpose flour
1/2 cup light brown sugar
3/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
5 tablespoons unsalted butter, cut into small pieces

2 cups all purpose flour
1/2 cup granulated sugar
2 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup egg nog, room temperature
1 egg, room temperature
5 tablespoon unsalted butter, melted and cooled
1 teaspoon vanilla extract

2/3 cup powdered sugar
2 tablespoons egg nog

Preheat oven to 350ยบ F. Line a muffin tin with paper liners or spray with cooking spray. Set aside.

Streusel Topping
In a medium bowl combine the flour, brown sugar, cinnamon and nutmeg. Cut in the butter until it resembles coarse crumbs. Set aside.

In a large bowl whisk together the flour, sugar, baking powder, cinnamon and nutmeg. Set aside.

In a medium bowl whisk together the egg nog, melted cooled butter and vanilla extract.

Pour the wet ingredients over the dry ingredients and stir just until combined.

Place 1 tablespoon of batter into each prepared muffin cup and top with 2 teaspoons of streusel topping. Cover streusel with remaining batter and cover batter with remaining streusel.

Bake for 20 minutes or until and inserted toothpick comes out clean. Let muffins cool to room temperature.

While muffins are cooling whisk together the powdered sugar and egg nog until smooth, to create the glaze. Drizzle glaze over cooled muffins.
