Roasted Garlic Pasta with Adobo Cream Sauce: Savory Sweet and Satisfying

Another delicious pasta dish to add to my ever growing collection. I really think I could eat pasta everyday. It is just so good, especially when it is spicy like this dish. A whole head of roasted garlic, tomatoes, chipotle peppers all mix in with pasta, makes for a yummy and spicy dish.

Roasted Garlic Pasta with Adobo Cream Sauce

Ingredients:

  • 3 1/2 cups rotini pasta
  • 1 head garlic
  • 2 teaspoons olive oil
  • 2 cups milk
  • 2 tablespoons all purpose flour
  • 2 chipotle peppers in adobo sauce, finely diced
  • 15 ounces no salt added diced tomatoes
  • 1/2 teaspoon black pepper

Directions:

  1. Preheat oven to 400º F.
  2. Peel the outer layers of the garlic head, making sure to leave the individual skins on the cloves and keeping the garlic head together.
  3. Cut 1/4-1/2 inch off of the top of the garlic head, exposing the individual cloves of garlic.
  4. Place the garlic head on a piece of aluminum foil and drizzle with olive oil. Wrap the aluminum foil around the garlic head completely covering it.
  5. Place the garlic head in the oven and roast for 35-40 minutes.
  6. Remove garlic from the oven and allow to cool to the touch.
  7. Unwrap garlic and squeeze out the cloves into a small bowl and mash with a fork. Set aside.
  8. Cook pasta according to package directions and drain, reserving 1/2 cup pasta water.
  9. In a large pot, over medium high heat, add in the milk and bring it to a simmer.
  10. Whisk in the flour and continue whisking for 2-3 minutes or until the milk thickens.
  11. Stir in the chipotle peppers, diced tomatoes and mashed roasted garlic. Whisk everything together and let simmer for 5 minutes.
  12. Season with black pepper. If the sauce is too thick add a bit of reserved pasta water until desired consistency is reached.
  13. Remove the sauce from the heat and add in the cooked and drained pasta. Stir to combine.
