Twice Baked Potato Casserole


I love twice baked potatoes, the filling is so creamy and delicious. This casserole has all the goodness of a twice baked potato, plus bacon.


Tender potatoes, creamy filling mixture and lots of cheesy goodness.


Twice Baked Potato Casserole

Ingredients:
  • 3 pounds red potatoes, baked
  • 1/4 teaspoon black pepper
  • 1- 12 ounce package turkey bacon, cooked and crumbled
  • 24 ounces light sour cream
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded cheddar cheese
  • 2 green onions, sliced
Directions:
  1. Preheat oven to 350º F. Spray a baking dish with cooking spray.
  2. Cut potatoes into bite sized pieces and place in prepared baking dish.
  3. Sprinkle with half of the pepper and bacon.
  4. Top with half of the sour cream, mozzarella and cheddar cheese. Repeat the layers.
  5. Bake uncovered for 20-25 minutes or until cheese is melted.
  6. Sprinkle with green onions.
