Garlic Lemon Double Stuffed Chicken: Savory Sweet and Satisfying

Chicken stuffed with two kinds of cheese, coated with bread crumbs and drizzled with a garlic lemon butter sauce equals one delicious chicken breast. The cheese makes this an indulgent dish and the garlic lemon butter brightens up the dish and adds a fresh flavor to it.

Garlic Lemon Double Stuffed Chicken

Ingredients:

  • olive oil
  • 4 boneless skinless chicken breasts
  • 4 ounces cream cheese, cut into 4 slices
  • 4 ounces cheddar cheese, cut into 4 slices
  • 1/2 cup milk
  • 3/4 cup Italian seasoned bread crumbs
  • 1/4 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 6 tablespoons unsalted butter, melted
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Directions:

  1. Preheat oven to 350º F. Lightly coat a shallow baking dish with oil.
  2. Pour milk into a shallow bowl.
  3. In another shallow bowl combine the bread crumbs and Parmesan cheese.
  4. Butterfly the chicken breasts by slicing them in half horizontally through the center, stopping just before cutting completely through. Open the chicken breasts and lay flat.
  5. Place one slice of cream cheese and cheddar cheese in the center of the chicken breasts.
  6. Close the chicken breasts and secure with toothpicks.
  7. Carefully dip both sides of each chicken breast in the milk. Then dip in the bread crumbs pressing lightly to coat each side.
  8. Place chicken breasts in prepared dish.
  9. In a small saucepan over medium heat, melt butter. Stir in lemon juice and garlic.
  10. Drizzle evenly over the chicken.
  11. Sprinkle with garlic powder and paprika.
  12. Bake for 30 minutes or until the chicken is completely cooked.

This recipe can easily be doubled to feed a larger crowd.
