Since my family enjoys things spicy I used hot sausage, but if you are not like us go ahead and use mild sausage.
Sausage, Egg and Cheese Bake
Ingredients:
- 3 cups frozen cubed hash browns, thawed
- 1 cup swiss cheese, shredded
- 1 cup hot sausage, cooked and well drained
- 1 cup pepper jack cheese, shredded
- 4 eggs, lightly beaten
- 1 cup half and half
- Preheat oven to 400º F. Spray a 1 1/2 quart deep casserole dish with cooking spray.
- Place the hash browns in prepared baking dish. Bake for 20 minutes.
- Remove from oven and reduce oven temperature to 350º F.
- Sprinkle swiss cheese over hash brown, then the sausage and then the pepper jack cheese.
- In a medium bowl combine the eggs and half and half. Pour this mixture over the hash brown, cheese and sausage.
- Bake uncovered for about 45 minutes or until center is set and an inserted knife comes out fairly dry.
- Let stand for 10 minutes.
