When it comes to frozen cherries I prefer the tart cherries over the dark sweet cherries. However, I always have a hard time finding frozen tart cherries. So when making this ice cream I had to settle for the dark sweet variety.
Even though I could not use the cherries I really wanted in this ice cream, it still turned out pretty delicious. But when I do find the tart cherries I will definitely be making this ice cream again.
Dark Cherry Ice Cream
Ingredients:
- 16 ounce bag frozen dark cherries, thawed
- 1/2 cup granulated sugar
- 1 1/2 cups half and half
- 1 1/2 cups whipping cream
- 2 teaspoons almond extract
Directions:
- Place a freezer safe container for storing the ice cream in the freezer.
- Place the thawed cherries and any juice from the bag in a medium saucepan. Cook over medium for about 5 minutes or until the cherries have softened.
- Remove from heat and add in sugar, stirring until the sugar is completely dissolved.
- Stir in the half and half, whipping cream and almond extract. Place mixture in a bowl and refrigerate until completely cold.
- Pour into ice cream machine and churn according to manufacturer's directions.
- Take storage container out of the freezer and transfer ice cream into it. Cover and freeze.
