This casserole is a great breakfast dish. It has eggs, sausage, cheese, a little spice from green chilies and some mushrooms. A delicious and slightly spicy way to start the day.
Sausage and Egg Casserole
Ingredients:
- 6 eggs
- 1/4 cup plain Greek yogurt
- 12 ounce roll breakfast sausage
- 4 ounces fresh mushroom, sliced
- 4 ounce can diced green chilies
- 8 ounces shredded mozzarella cheese
Directions:
- Preheat oven to 400º F. Spray a 9x13 baking dish with cooking spray.
- In a medium bowl combine the eggs and Greek yogurt. Pour into prepared dish ad bake for 8-10 minutes or until the eggs are just set (not too firm).
- While the eggs are cooking, cook the sausage in a skillet over medium heat. Drain off any fat.
- Add in the mushrooms and green chilies. Cook until mushrooms are tender about 2-3 minutes.
- Spoon sausage mixture over eggs. Sprinkle with cheese.
- Bake for 10-15 minutes or until cheese is melted and dish is warmed through.
