This salad has all the goodness of a BLT, except in place of bread there is pasta. Initially this salad is served room temperature, but if there are any leftovers they need to be refrigerated, and I think the cold leftovers taste just as good as it tasted freshly made. Making it a delicious salad perfect for the summer months.
BLT Pasta Salad
Ingredients:
- 12 ounces rotini pasta
- 1/2 cup milk
- 1/3 cup light mayonnaise
- 1/3 cup greek yogurt
- 1/3 cup light sour cream
- 12 ounces turkey bacon, cooked and crumbled
- 5 Roma tomatoes, cut into bite sized pieces
- 4 tablespoons green onions
- 5 cups chopped romaine lettuce
Directions:
- Cook pasta according to directions. Drain and rinse with cold water.
- Add drained pasta to a large bowl and mix in milk.
- In a small bowl combine the mayonnaise, yogurt, and sour cream. Add to pasta and mix well.
- Add the bacon and tomatoes to the pasta and mix. Add in the the green onions and lettuce and mix.
