Bang Bang Chicken

Bang Bang Chicken

I have no clue how the name of this chicken came to be, but I do know that the chicken is quite delicious. But it is the sauce that really makes this chicken. The sauce is oh so very delicious.




Bang Bang Chicken
Ingredients:

Chicken
4 boneless skinless chicken breasts, cut into nugget sized pieces
1 cup buttermilk
3/4 cup flour
1/2 cup cornstarch
1 egg
1 tablespoon garlic powder
1 teaspoon paprika
1 tablespoon Frank's hot sauce
2-3 cups panko breadcrumbs

Sauce
1/2 cup mayonnaise
1/4 chili sauce
1 tablespoon Frank's hot sauce
2 tablespoons honey

Directions:
In a medium bowl combine flour, cornstarch, garlic powder, paprika and pepper. To the same bowl add hot sauce, egg and buttermilk, whisking until the batter is smooth. Add the chicken pieces stirring to make sure the chicken is all coated in the batter. Set aside.

In a shallow dish add panko and set aside.

In a small bowl combine the mayonnaise, chili sauce, hot sauce and honey. Refrigerate until ready to serve chicken.

Preheat oven to 350º F. Place a cooling rack on a rimmed baking sheet and lightly spray the cooling rack with cooking spray.

Take the chicken out of the batter one piece at a time, coat it in the panko and then place on the prepared rack. Once all the chicken is coated in panko bake for 15-20 minutes or until the chicken is completely cooked. Serve with prepared sauce.
