Cheesy Baked Quinoa
Ingredients:
- 1 cup quinoa
- 2 cups low sodium chicken broth
- 4 ounces reduced fat cream cheese
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon onion powder
- 1/4 teaspoon black pepper
Directions:
- Preheat oven to 350º F.
- In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, cover and reduce heat to low. Simmer for 15 minutes or until all of the liquid is absorbed. Turn off heat.
- Add the cream cheese, 1/2 cup cheddar cheese, Parmesan cheese, onion powder and black pepper to the cooked quinoa. Stir until the cheese is melted and all of the ingredients are combined.
- Scoop quinoa into a 1 1/2 to 2 quart baking dish and smooth top into an even layer. Sprinkle top with remaining 1 cup of cheddar cheese.
- Bake for 15 minutes or until cheese is melted and bubbly.
