Cheesy Baked Quinoa: Savory Sweet and Satisfying

This quinoa is yummy! It is like macaroni and cheese, but instead of noodles you have quinoa, cheesy delicious quinoa. And to make it even better, it is easy to make.

Cheesy Baked Quinoa

Ingredients:

  • 1 cup quinoa
  • 2 cups low sodium chicken broth
  • 4 ounces reduced fat cream cheese
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper

Directions:

  1. Preheat oven to 350º F.
  2. In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, cover and reduce heat to low. Simmer for 15 minutes or until all of the liquid is absorbed. Turn off heat.
  3. Add the cream cheese, 1/2 cup cheddar cheese, Parmesan cheese, onion powder and black pepper to the cooked quinoa. Stir until the cheese is melted and all of the ingredients are combined.
  4. Scoop quinoa into a 1 1/2 to 2 quart baking dish and smooth top into an even layer. Sprinkle top with remaining 1 cup of cheddar cheese.
  5. Bake for 15 minutes or until cheese is melted and bubbly.
