Coconut Banana Bread with Lime Glaze


Every time I come across a recipe that calls for lime and coconut together, that song from the lime coke commercial pops into my head, "you put the lime in the coke you nut..."  and it makes me so sad. I wish they still made regular lime coke, not just the diet version; I loved lime coke.

Oh well, on to the bread.

Coconut Banana Bread with Lime Glaze

This bread was nice and moist with just a hint of sweetness from the coconut. Topped with a yummy lime glaze that adds a little lime flavor to every bite. This banana bread is a delicious way to use up ripe bananas!

Coconut Banana Bread with Lime Glaze

Ingredients:
  • 2 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 4 tablespoons unsalted butter, softened
  • 2 eggs
  • 1 1/2 cups mashed ripe bananas (about 4 medium to large)
  • 1/4 cup fat free Greek yogurt
  • 3 tablespoons fat free milk
  • 1 teaspoon vanilla extract
  • 1/2 cup + 2 tablespoons sweetened coconut, divided
  • 1/2 cup powdered sugar
  • 1 1/2 tablespoons fresh lime juice (about 1 lime)
Directions:
  1. Preheat oven to 350 degrees. Grease a 9x5 loaf pan.
  2. In a medium bowl whisk together flour baking soda, and salt. Set aside.
  3. In a large bowl beat the butter and granulated sugar until well mixed.
  4. Add in the eggs and beat until combined.
  5. Add in the banana, yogurt, milk, and vanilla, beating until combined.
  6. Add in the flour mixture beating until just combined on low speed.
  7. Stir in 1/2 cup coconut.
  8. Pour the batter into prepared pan and sprinkle with remaining 2 tablespoons coconut.
  9. Bake for 1 hour or until an inserted toothpick comes out clean. At about 40 minutes you will want to keep an eye on the bread to make sure the coconut and top of bread are not getting too brown. If they are, loosely cover the bread with some foil and continue baking until bread is done.
  10. When bread is done remove from oven and place on a cooling rack, in the pan, for 10 minutes.
  11. In a small bowl, combine the powdered sugar and lime juice until well mixed.
  12. After the bread has cooled for 10 minutes, remove it from the pan and drizzle with the lime glaze.
  13. Cool the bread for another 15 minutes before serving.
