These potatoes are named after my Aunt Laura, because growing up she made them once and they instantly became a family favorite and whenever my brother or I wanted them, we asked for "Aunt Laura potatoes" and the name stuck. I always requested these potatoes for a special holiday or meal because they were my favorite potatoes.
I had not made these potatoes in several years and decided it was time to make them again. They were just as good as I remember them being and my girls loved them just as much as I did growing up.
These potatoes are super easy to prepare, you don't even have to defrost the hash browns. Just mix all the ingredients together, pour into a lightly greased baking dish and let them bake away.
Aunt Laura Potatoes
Ingredients:
- 2 pounds frozen hash browns (cubed kind)
- 1 cup diced yellow onion
- 1 can cream of chicken soup
- 16 ounces light sour cream
- 1/4 cup unsalted melted butter
- 8 ounces sharp cheddar cheese, shredded
- 1/4 teaspoon black pepper
Directions:
- Preheat the oven to 375º F. Lightly grease the bottom and sides of a 9x13 baking dish.
- In a large bowl combine all of the ingredients until well mixed.
- Transfer the mixture into the prepared baking dish and spread into an even layer.
- Bake uncovered for 1 1/2 hours.
