Loaded Potato and Buffalo Chicken Casserole

This casserole is a great meat and potatoes dish. It was delicious with great flavor.

Besides being delicious, it used the same bowl for the potatoes and chicken and it cooked in the same baking dish. It made clean up nice and easy and who doesn't love that!?

Loaded Potato and Buffalo Chicken Casserole

Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 8-10 medium potatoes, cut into 1/2 inch cubes
  • 3 tablespoons olive oil
  • 1 tablespoon black pepper
  • 1 tablespoon paprika
  • 2 tablespoons garlic powder
  • 6 tablespoons Franks red hot sauce
  • 2 cups Mexican cheese blend, shredded
  • 10 slices turkey bacon, cooked and crumbled
  • 1 cup green onions, chopped

Directions:

  1. Preheat oven to 500°F. Coat a 9x13 baking dish with cooking spray.
  2. In a large bowl combine the olive oil, pepper, paprika, garlic powder and hot sauce.
  3. Add in the cubed potatoes and stir to coat.
  4. Scoop the potatoes out of the bowl and into the prepared baking dish. Leave as much of the olive oil and hot sauce mix as possible in the bowl.
  5. Bake the potatoes for 45-50 minutes, stirring every 10 minutes, until completely cooked, crispy and browned on the outside.
  6. Add the cubed chicken to the bowl with the leftover olive oil and hot sauce mix, stirring to coat. Let the chicken marinade in the sauce while the potatoes are cooking.
  7. In a medium bowl combine the cheese bacon and green onions, set aside.
  8. When the potatoes are done, remove them from the oven and lower the oven temperature to 400 degrees.
  9. Top the potatoes with the chicken and then top chicken with the cheese mixture.
  10. Bake for 15-20 minutes or until chicken is completely cooked and cheese is melted.
