Smothered Creamy Green Chile Bacon Chicken
Ingredients:
Chicken
- 6 boneless, skinless chicken breasts
- 8 ounces cream cheese, softened
- 4 ounce can diced jalapenos, drained
- 1/2 cup turkey bacon, cooked and crumbled
Sauce
- 1/4 cup unsalted butter
- 1/4 cup all purpose flour
- 2 cups half and half
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 4 ounce can green chilies, drained
- 1 1/2 cups colby jack cheese, shredded
- 1/4 cup turkey bacon, cooked and crumbled

- rice, quinoa or noodles
Directions:
Chicken
- Preheat oven to 350°F.
- In a small bowl, combine cream cheese, bacon, jalapeƱos. Stir well to combine.
- Carefully slice chicken to make a pocket for the filling. Cut it in half, like you are butterflying it, but do not cut all the way though.
- Divide the filling evenly between the six chicken breasts and stuff each chicken breast with the filling and place into a 9x13 baking dish.
- Cover the baking dish with foil and bake for 50 minutes or until the chicken is completely cooked.
Sauce
- Melt the butter in a medium saucepan over medium low heat.
- Add in the flour stirring for 1-2 minutes.
- Very slowly add half and half, stirring constantly, until all half and half has been added. Continue stirring until you reach your desired consistency.
- Remove from heat and add garlic powder, onion powder and green chilies. Stir until completely incorporated and set aside.
- After the chicken is done, drain any liquid from the baking dish.
- Cover the chicken with sauce and sprinkle with cheese and bacon.
- Place the baking dish back into the oven for 5 more minutes or until the cheese is melted.
- Serve over rice, quinoa or noodles.
