Easy and flavorful chicken that you can grill or cook in a skillet. If you cut the chicken breasts in half horizontally they will cook faster. You can also marinade this chicken for as little as 30 minutes or up to 24 hours. Of course the longer you let it marinade the more flavorful it will be. I also prepare my chicken and marinade the night before while I am making dinner.
Sweet Cajun Chicken
Ingredients:
- 1/4 cup olive oil
- 3 tablespoons cajun spice blend
- 2 tablespoons brown sugar
- 2 large chicken breasts
Directions:
- In a resealable bag, add in the olive oil, cajun seasoning and brown sugar. Seal the bag and squish until well combined.
- Cut the chicken breasts in half horizontally and add to the bag with the marinade. Seal the bag and turn a few times to cast the chicken. Refrigerate for at least 30 minutes, but up to 24 hours.
- Heat a large skillet over medium-high heat. Remove the chicken from the marinade and add to the skillet. Discard the marinade. Cook the chicken for 3-4 minutes or until browned, then flip over and cook on the other side for 3-4 minutes or until completely cooked.
