Crock Pot Cheesy Chicken Penne: Savory Sweet and Satisfying
 
I have been researching crock pots a fair amount over the last few months. Every crock pot I have owned cooks fast. Sometimes in half the time the recipe calls for. I usually put in frozen chicken and it is still done early. I think I may have figured out the issue. It seems that the crock pot needs to be 3/4 full otherwise it will cook faster. This causes another problem of needing several crock pots in order to have the right size one so it will be 3/4 full. I do not know about you, but I do not have room to store more than one crock pot.

Crock Pot Cheesy Chicken Penne: Savory Sweet and Satisfying

This recipe calls for penne pasta, but one of my kids got some music note pasta for Christmas and she wanted to use it in this recipe. Most times various pastas are interchangeable, instead of penne you could use another short cut pasta like rotini, farfalle, ziti or cavatappi.

This dish is essentially mac and cheese with chicken. An easy dish that makes a great and delicious dinner for those busy weeknights or in my case busy weekends as well.

Crock Pot Cheesy Chicken Penne

Ingredients:

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2- 10.5 ounce cans cream of chicken soup
  • 1/2 cup low sodium chicken broth
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 cup sour cream
  • 8 ounces sharp cheddar cheese, shredded and divided
  • 1 pound penne pasta

Directions:

  1. To the crock pot, add in the cream of chicken soup and chicken broth. Stir until smooth and well combined.
  2. Stir in the pepper and Italian seasoning. 
  3. Add in the chicken breasts. Cover the crock pot and cook on low for 6 hours.
  4. Just before the cooking time is up, cook the pasta according to the package directions until al dente. Drain well.
  5. Meanwhile, once the cooking time is up, remove the chicken and shred.
  6. To the crock pot, stir in the sour cream and half of the cheese.
  7. Add in the cooked and drained pasta and shredded chicken and stir to mix well.
  8. Sprinkle the remaining cheese over top. Cover the crock pot and cook on low for 20 minutes.
