The original recipe used rigatoni for this pasta and I have made several recipes lately that call for rigatoni. However, I have been unable to find rigatoni in the grocery store, so I have been substituting with penne pasta. I am so glad that there are so many different kinds of pastas available, making it easy to substitute when needed.
Creamy, cheesy pasta always seems to make a bad day just a little bit better. Everyone in my family enjoyed this pasta and went back for seconds. I enjoyed that I could make the casserole one day and then bake it the next.
Cheesy Chicken Pasta
Ingredients:
Pasta
- 12 ounces penne pasta
- 4 cups cooked, shredded chicken breasts
- 10.5 ounce can cream of chicken soup
- 4 ounces mozzarella cheese, shredded
- 1/4 cup shredded parmesan cheese
Cheese Sauce
- 10.5 ounce can cheese soup
- 5 ounces evaporated milk
- 1 1/4 cups heavy cream
- 2 teaspoons minced garlic
- 4 ounces mozzarella cheese, shredded
- 1/2 cup shredded parmesan cheese
- 1/4 teaspoon black pepper
Directions:
- Preheat the oven to 350º F. Spray a 9x13 inch baking dish with cooking spray.
- Cook the pasta according to the package directions. Drain the pasta well and return to the pot.
- While the pasta cooks, in a large saucepan, combine the cheese soup, evaporated milk, heavy cream and garlic. Heat over medium-high heat until the sauce comes to a boil. Reduce the heat to low and allow the mixture to simmer for 5-7 minutes or until the sauce thickens. Remove the saucepan from the heat and stir in the mozzarella cheese, parmesan cheese and black pepper.
- To the pasta, add in the cooked chicken, cream of chicken soup and cheese sauce. Stir until well combined.
- Transfer the mixture to the prepared baking dish and sprinkle with mozzarella and parmesan cheese.
- Baked uncovered for 45 minutes or until hot and bubbly and cheese is starting to turn golden brown.
