Strawberry Cheesecake Pancakes: Savory Sweet and Satisfying

Pancakes are made with cream cheese for a cheesecake taste. To make mixing the cream cheese easy the wet ingredients are done in a blender and then poured into the dry ingredients. The strawberry sauce is simple to make and made with fresh strawberries. The perfect topping for these pancakes.

Strawberry Cheesecake Pancakes

Ingredients:

Fresh Strawberry Sauce

  • 3 cups strawberries, diced
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1/4 teaspoon vanilla extract

Cheesecake Pancakes

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 8 ounces cream cheese, softened
  • 1 cup non fat Greek yogurt
  • 1 tablespoon lemon juice
  • 2 eggs
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 1/4-1 1/2 cups milk
  • 2 tablespoons unsalted butter, melted

Directions:

Fresh Strawberry Sauce

  1. In a medium saucepan, combine the diced strawberries, lemon juice and vanilla extract. 
  2. Bring the mixture to a boil and then reduce to a simmer. Simmer, stirring occasionally, until the strawberries are soft and the syrup has reduced by 1/3 to 1/2 in volume and has thickened, about 15 minutes.
  3. Syrup will continue to thicken as the syrup cools. Whisk in a bit of water if it becomes to thick.

Cheesecake Pancakes

  1. In a large bowl, whisk together the flour, baking powder and baking soda.
  2. In a blender, add in the cream cheese, Greek yogurt, lemon juice, eggs, granulated sugar, 1 1/4 cups milk and melted butter. Blend until well combined and smooth.
  3. Pour the cheesecake mixture into the dry and whisk just until combined. Do not over mix, there will be small lumps. If you want thinner pancakes add more milk.
  4. Allow the batter to rest while you preheat a griddle over medium heat.
  5. Lightly grease a skillet with a little bit of cooking spray, oil or butter. Using a 1/4 cup measurer, pour the batter onto the skillet and cook until bubbles appear on the surface, about 2-4 minutes. Flip the pancakes over and cook on the other side, about 2-4 minutes.
  6. Serve the pancakes topped with the fresh strawberry sauce.
