Ravioli Sauce

Ravioli Sauce: Savory Sweet and Satisfying
 
I wish all meals could be this easy and delicious. It really stinks when I spend awhile making a meal and it is not a keeper. This dish on the other hand was super easy to prepare and had good flavor.

Ravioli Sauce: Savory Sweet and Satisfying

I did not drain my can of tomatoes, I didn’t think there was that much liquid in it to make that big of difference, plus the recipe said to keep the drained liquid, but obviously I was wrong and my sauce was thinner than I would have like, so definitely don't do what I did. Make sure you drain the can of tomatoes, but do save the liquid in case the sauce is too thick and you want to thin it a little bit.

Ravioli Sauce

Ingredients:

  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all purpose flour
  • 1 tablespoon tomato paste
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dry mustard powder
  • 3/4 cup low sodium chicken broth
  • 1 1/2 cups half and half
  • 10 ounce can tomatoes with green chilies, drained and liquid reserved
  • 3 tablespoons cream cheese, softened
  • 1/3 cup grated parmesan cheese
  • 20 ounces refrigerated or frozen ravioli
  • pinch red pepper flakes

Directions:

  1. In a large skillet, with high sides, melt the butter over medium-low heat. Add in the garlic and cook, stirring constantly for 2 minutes. Add in the flour and stirring constantly, cook for 2 more minutes.
  2. Add in the tomato paste, onion powder, basil, oregano and mustard powder, stirring to combine.
  3. While stirring constantly, slowly pour in the chicken broth, followed by the half and half. Bring the mixture to a boil, stirring constantly. Reduce the heat to a simmer.
  4. Add in the cream cheese and drained tomatoes, stirring to combine. Reduce the heat to low.
  5. Add in the parmesan cheese and red pepper flakes and stir to combine.
  6. Cook the ravioli, according to package directions and drain.
  7. Add the ravioli to the skillet and gently stir to combine. If the sauce is too thick add in a little bit of reserved tomato juice.
