I made this recipe to use up some ham I had leftover in the freezer and some potatoes I had in the pantry. It turns out this recipe was meant to be, because I had just enough ham and potatoes to double the recipe. I did not double the mushrooms, since those are not a favorite of mine and one of my daughters. 1 pack of mushrooms was plenty enough for us.
This is one of those recipes you could prepare the night before and just bake it the following day. Making it an easy weeknight meal.
