Cheesy Chorizo Pasta: Savory Sweet and Satisfying
 
I love chorizo, it is not only spicy but has great flavor. Adding chorizo to a simple dish like this makes for such a flavorful dish. One that I definitely look forward to eating as leftovers.

Cheesy Chorizo Pasta: Savory Sweet and Satisfying

30 minutes and simple pantry ingredients, except for the chorizo, and you have one easy and delicious meal. A meal that I will make again and again.

Cheesy Chorizo Pasta

Ingredients:

  • 1/2 pound shell pasta
  • 1 pound ground chorizo sausage
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tablespoons taco seasoning
  • 1 cup water
  • 1 cup tomato sauce
  • 1/4 teaspoon black pepper
  • 4 ounces sharp cheddar cheese, shredded

Optional Toppings

  • tortilla chips, crushed
  • cheddar cheese, shredded
  • sour cream

Directions:

  1. Cook the pasta according to the package directions and drain well.
  2. In a large skillet, over medium-high heat, cook the chorizo breaking it up as it cooks.
  3. Once the chorizo is completely cooked, add in the onion, garlic and pepper. Cook, stirring occasionally, for 2-3 minutes.
  4. Add in the taco seasoning and water, allow to cook, stirring occasionally, until the water has evaporated.
  5. Add the pasta back to the pot and stir in the tomato sauce.
  6. Transfer the pasta to the skillet and stir to combine.
  7. Reduce the heat to low and add in the cheese, stirring until the cheese has melted.
  8. Serve with optional toppings if desired.
