I love chorizo, it is not only spicy but has great flavor. Adding chorizo to a simple dish like this makes for such a flavorful dish. One that I definitely look forward to eating as leftovers.
Cheesy Chorizo Pasta
Ingredients:
- 1/2 pound shell pasta
- 1 pound ground chorizo sausage
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tablespoons taco seasoning
- 1 cup water
- 1 cup tomato sauce
- 1/4 teaspoon black pepper
- 4 ounces sharp cheddar cheese, shredded
Optional Toppings
- tortilla chips, crushed
- cheddar cheese, shredded
- sour cream
Directions:
- Cook the pasta according to the package directions and drain well.
- In a large skillet, over medium-high heat, cook the chorizo breaking it up as it cooks.
- Once the chorizo is completely cooked, add in the onion, garlic and pepper. Cook, stirring occasionally, for 2-3 minutes.
- Add in the taco seasoning and water, allow to cook, stirring occasionally, until the water has evaporated.
- Add the pasta back to the pot and stir in the tomato sauce.
- Transfer the pasta to the skillet and stir to combine.
- Reduce the heat to low and add in the cheese, stirring until the cheese has melted.
- Serve with optional toppings if desired.
