Chorizo Hash Brown Casserole: Savory Sweet and Satisfying
 
The hash brown casserole gets some Mexican flavor for a little spicy delicious twist. Chorizo, fresh jalapeño and enchilada sauce add a bold spicy flavor to this cheesy hash brown casserole.

Chorizo Hash Brown Casserole: Savory Sweet and Satisfying

This is a technically a make again Monday recipe since I have made it before, but I altered it use a whole bag of shredded hash browns instead of partial bag, so I felt it needed it's own post. To see the original post and recipe click here.

Chorizo Hash Brown Casserole

Ingredients:

  • 1 pound ground Mexican Chorizo
  • 1/2 cup diced yellow onion
  • 2 jalapeño, seeded and diced
  • 2 tablespoons olive oil
  • 32 ounces frozen shredded hash browns
  • black pepper, to taste
  • 16 ounces sour cream
  • 2 eggs, lightly beaten
  • 2 cups enchilada sauce
  • 6 ounces sharp cheddar cheese, shredded
  • 6 ounces Monterey jack cheese, shredded
  • 6 ounces Colby cheese, shredded

Directions:

  1. Preheat the oven to 350º F. Spray a 9x13 inch baking dish with cooking spray.
  2. In a large nonstick skillet, over medium-high heat, cook and crumble the chorizo. When the sausage is almost completely cooked, add in the onions and jalapeños and cook until softened.
  3. Leaving the grease in the skillet, transfer the chorizo to a large bowl.
  4. Add the olive oil to the skillet with the chorizo grease and heat over medium-high heat. Add the hash browns and cook just until the hash browns are starting to brown. Transfer the hash browns to the prepared baking dish and season with black pepper.
  5. In a medium bowl, whisk together the sour cream and eggs. Pour this mixture over the hash browns and gently mix into the hash brown.
  6. Stir the enchilada sauce into the chorizo and spread the mixture on top of the hash browns.
  7. Sprinkle all of the cheeses on top. Cover the baking dish and bake for 30 minutes.
  8. Uncover the baking dish and bake for an additional 10 minutes.
