Who doesn’t love an easy dinner? Well, at least an easy protein. This chicken is ready in under 30 minutes and is super flavorful. It only serves about 3, but can easily be doubled to serve more or have some leftovers. You can also double the sauce portion of this recipe if you like a little more sauce.
This chicken taste great on it own, but also taste great serve on rice with some sauce drizzled on top. If serving over rice you may want to double the sauce ingredients.
Honey Garlic Chicken Bites
Ingredients:
- 1 pound boneless skinless chicken breasts, cut into 1 inch cubes
- 2 teaspoons cornstarch
- black pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/4 cup honey
- 3 tablespoons low sodium chicken stock
- 1-2 tablespoons lemon juice
- 1 teaspoon sriracha
- 1 teaspoon red pepper flakes
Directions:
- In a large bowl, combine the chicken pieces and the cornstarch. Mix until the chicken is evenly coated in the cornstarch.
- In a large skillet, over medium-high heat, add in the oil and butter. Allow the butter to melt and mix with the olive oil.
- Add in the chicken pieces and cook on all sides until golden brown, about 6-8 minutes. Do not overcrowd the pan and work in batches if necessary.
- Once the chicken is cooked, add in the garlic, honey, chicken stock, lemon juice and hot sauce. Stir to completely coat the chicken. Allow the sauce and chicken to simmer for a few minutes until the sauce reduces a little bit and sticks to the chicken.
