Eggnog Pancakes with Eggnog Syrup: Savory Sweet and Satisfying

I already have an eggnog pancake recipe and they are topped with a homemade cranberry orange syrup. They have a subtle eggnog flavor and are topped with a sweet and tart cranberry syrup made with fresh cranberries.

With this recipe I had planed to make my eggnog pancakes, and use the syrup from this recipe. It was the syrup I really wanted to try. But in the end I made the whole recipe, syrup and pancakes.

I am so glad that I made these pancakes. They were incredibly fluffy and the syrup added a bit of sweetness to these sweet and fluffy pancakes. Did I mention how fluffy these pancakes are?

Eggnog Pancakes with Eggnog Syrup

Ingredients:

Eggnog Pancakes

  • 2 cups all purpose flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2-2 cups eggnog
  • 2 tablespoons unsalted butter, melted and slightly cooled

Eggnog Syrup

  • 1/2 cup pure maple syrup
  • 2 tablespoons eggnog

Directions:

  1. Preheat a griddle, over medium heat.
  2. In a medium bowl, whisk together the flour, baking powder and nutmeg. Set aside.
  3. In another medium bowl, whisk together the eggs, vanilla and 1 1/2 cups eggnog.
  4. Pour the wet ingredients into the dry and mix just until combined. Stir in the melted cooled butter and any additional eggnog is the batter is too thick. Do not over mix the batter, small lumps are okay.
  5. Lightly spray the griddle with cooking spray or melted some butter on the griddle.
  6. Using a 1/4 cup measure, pour the batter onto the griddle. Cook for 3-4 minutes or until the bottoms are golden and the edges are set.
  7. Flip the pancakes over and cook on the other side or 3-4 minutes or until the bottoms are golden. Repeat with the remaining batter.
  8. Meanwhile, in a small bowl, whisk together the syrup and eggnog.
  9. Pour the syrup over individual servings of the pancakes.
