Eggnog Brownie Ice Cream

 
What do you do when you have some leftover eggnog, and heavy cream from the holidays? You make ice cream of course. Eggnog ice cream with chunks of homemade brownies. 

I choose to make homemade brownies for this ice cream, but you could use store bought or a box mix, whatever works best for you. You will need 1/2 of an 8x8 inch pan of brownies.

Eggnog Brownie Ice Cream

Ingredients:

  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 cups eggnog
  • dash ground nutmeg
  • 1/2 8x8 inch pan of brownies

Directions:

  1. Place freezer safe container, for storing the ice cream, in the freezer.
  2. In a large bowl, whisk together the heavy cream and sugar until the sugar is completely dissolved.
  3. Stir in the eggnog and dash of nutmeg.
  4. Pour into an ice cream maker and churn according to manufacturer's directions.
  5. Meanwhile, cut the brownies into small chunks, a little less than 1 inch chunks.
  6. Remove storage container from freezer and transfer ice cream into it. Gently fold the brownie chunks into it and smooth into an even layer. Put the lid on the container and freeze.
