Sweet Chili Chicken Marinade
Ingredients:
- 1 cup sweet chili sauce
- 1/4 cup low sodium soy sauce
- 1/4 cup apple cider vinegar
- 3 tablespoons canola oil
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1/4 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 3 pounds boneless skinless chicken breasts
Directions:
- In a small bowl whisk together all of the ingredients, except for the chicken.
- In a resealable bag, add in the chicken and then pour the marinade in. Seal the bag and turn a few times to coat the chicken. Refrigerate at least 2 hours and up to 24 hours.
- Preheat a skillet over medium-high heat.
- Remove the chicken from the marinade and discard the marinade. Place the chicken in the skillet and cover the skillet with a lid. Cook for about 8 minutes, remove the lid, flip the chicken over and cover the skillet again. Cook on the other side until chicken is completely cooked, about 8 minutes.
Notes:
The nutritional info includes all of the marinade ingredients, however the chicken does not absorb all of the marinade, making it hard to get an accurate nutritional info.
