30 minutes and one skillet to delicious and flavorful dinner. Chorizo adds a ton of flavor to any dish it is in and I love the flavor of it. I also love orzo, so the combination of the two in one meal is a dinner I will be making again and again.
Cheesy Tomato Chorizo Orzo
Ingredients:
- 4 ounces ground chorizo
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups orzo, uncooked
- 15 ounce can diced tomatoes
- 2 1/2 cups low sodium chicken broth
- 1/2 cup shredded parmesan cheese
- black pepper, to taste
Directions:
- In a large skillet, over medium heat, add the chorizo and cook breaking it up for 5 minutes. Add in the onion and cook for 3 minutes or until the onions are softened and chorizo is completely cooked. Add in the garlic and orzo and cook, stirring constantly for 1 minute.
- Stir in the tomatoes and chicken broth. Bring the mixture to a boil, cover the skillet and reduce the heat to a simmer. Simmer for about 10 minutes or until the pasta is al dente and all the liquid has been absorbed.
- Stir in the cheese and season with black pepper if desired.
Notes:
If the pasta is cooked before the liquid has evaporated, remove the lid and allow to simmer for a minute or two while stirring occasionally.
