Cheesy Tomato Chorizo Orzo: Savory Sweet and Satisfying
 
30 minutes and one skillet to delicious and flavorful dinner. Chorizo adds a ton of flavor to any dish it is in and I love the flavor of it. I also love orzo, so the combination of the two in one meal is a dinner I will be making again and again. 

Cheesy Tomato Chorizo Orzo: Savory Sweet and Satisfying

Cheesy Tomato Chorizo Orzo

Ingredients:

  • 4 ounces ground chorizo
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups orzo, uncooked
  • 15 ounce can diced tomatoes
  • 2 1/2 cups low sodium chicken broth
  • 1/2 cup shredded parmesan cheese
  • black pepper, to taste

Directions:

  1. In a large skillet, over medium heat, add the chorizo and cook breaking it up for 5 minutes. Add in the onion and cook for 3 minutes or until the onions are softened and chorizo is completely cooked. Add in the garlic and orzo and cook, stirring constantly for 1 minute.
  2. Stir in the tomatoes and chicken broth. Bring the mixture to a boil, cover the skillet and reduce the heat to a simmer. Simmer for about 10 minutes or until the pasta is al dente and all the liquid has been absorbed. 
  3. Stir in the cheese and season with black pepper if desired.

Notes:
If the pasta is cooked before the liquid has evaporated, remove the lid and allow to simmer for a minute or two while stirring occasionally.
