Baked Tuscan Chicken

Baked Tuscan Chicken: Savory Sweet and Satisfying

This chicken dish was so easy to put together. The hardest part of the recipe is remembering to get the frozen spinach out to thaw. Which is something I can never remember to do in time to have it thawed in time to make dinner.

I really wish my girls liked sun dried tomatoes. I think they are delicious and have such good flavor. Combine that flavor with all the other ingredients on the chicken and you have a flavorful chicken dish.

Baked Tuscan Chicken

Ingredients:

  • 1 pound boneless skinless chicken breasts
  • black pepper, to taste
  • 4 cloves garlic, minced
  • 6 ounces frozen chopped spinach, thawed and squeezed dry
  • 3 ounces cream cheese, room temperature
  • 1/3 cup heavy cream
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/3 cup grated parmesan cheese
  • 8 ounce jar sun dried tomatoes, drained and 1 tablespoon oil reserved
  • 3 ounces mozzarella cheese, shredded

Directions:

  1. Preheat the oven to 400º F.
  2. Cut the chicken breasts in half horizontally and place into a 9x13 inch baking dish.
  3. Season the chicken with the black pepper and half of the garlic.
  4. In a large bowl, beat together the spinach, cream cheese and heavy cream. Add in the remaining garlic, onion powder, chili powder, black pepper and Italian seasoning. Beat until combined. Add in the parmesan cheese and half of the mozzarella cheese. Beat again until combined.
  5. Spread the spinach and cheese mixture over top of the chicken.
  6. Chop the sun dried and place on top of the spinach and cheese mixture. Drizzle the reserved tablespoon of sun dried tomato oil over top. Sprinkle the remaining mozzarella cheese on top.
  7. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 15 minutes or until the chicken is completely cooked.
