Bacon Wrapped Tater Tot Bombs


I started out making this like the recipe stated and got out four slices of bacon and quartered them. I realized when I went to wrap the tater tots, that the pieces of bacon were not long enough. So, I got out some more bacon and rolled the tater tots, then cut the bacon to make sure it was long enough. Since I use turkey bacon and not "real" bacon that might have caused the problem. However, I would still recommend wrapping the tater tots then cutting the bacon. With any leftover bacon pieces I saved them and cooked them up for breakfast. My girls will never say no to bacon, although one would rather have sausage, she will still eat plenty of bacon.

These tater tots make a great snack, appetizer, side to dinner or I could even see serving them as a part of brunch. Essentially, make them and eat them whenever or with what ever you want.

The original recipe mentioned you may want to double or triple them and they were not kidding. These were gone in a heartbeat when I served them and everyone was looking for more.

Bacon Wrapped Tater Tot Bombs

Ingredients:

  • 16 frozen tater tots, room temperature
  • 1 ounce sharp cheddar cheese, cut into 1/4 inch squares
  • 16 slices low sodium turkey bacon, about
  • 1/4 cup brown sugar, packed

Directions:

  1. Preheat the oven to 400º F. Line a baking sheet with parchment paper or a silpat.
  2. Place the brown sugar into a bowl.
  3. Working with one tater tot at a time, place a cheese square on top and wrap with a piece of bacon, overlapping the bacon ever so slightly. Carefully cut off any extra bacon. Repeat with the remaining tater tots.
  4. Press each tater tot into the brown sugar pressing lightly to coat in brown sugar. Place the tater tots seam side down onto the prepared baking sheet.
  5. Bake for 20-25 minutes, flipping the tater tots halfway through the cooking time.
