Teriyaki Chicken Quesadilla

Teriyaki Chicken Quesadilla: Savory Sweet and Satisfying
 
I wanted to remake my Homemade Teriyaki Sauce so I could update the pictures on the blog. First, I needed to find a recipe to use the sauce on. I found this quesadilla recipe which was perfect since I had tortillas to use up. However, when I went to make the recipe I realized that the the chicken cooks in the teriyaki sauce in the oven. So, I would not be able to take picture like I planned, but I loved that the chicken and sauce cook together, making the recipe even easier and less dirty dishes.

I never would have thought to use teriyaki chicken in a quesadilla, but I am sure glad someone did, because it is so delicious and cheesy like a quesadilla should be.

Teriyaki Chicken Quesadilla

Ingredients:

Teriyaki Sauce

  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/2 cup low sodium soy sauce
  • 1/4 cup apple cider vinegar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 clove garlic, minced

Quesadilla

  • 1 boneless skinless chicken breast
  • 4 flour tortillas
  • 8 ounces sharp cheddar cheese, shredded

Directions:

  1. Preheat the oven to 350º F.
  2. In small bowl, stir together the cornstarch and water until well mixed and smooth. Stir in the the remaining teriyaki sauce.
  3. Place the chicken breast into a small baking dish and pour the teriyaki sauce over top.
  4. Bake for 30 minutes or until the chicken is completely cooked.
  5. Remove the chicken from the oven and shredded the chicken. Reserve the teriyaki sauce.
  6. Heat a large nonstick skillet over medium heat.
  7. Sprinkle half of each tortilla with about 1/4 cup of cheese. Top the cheese with some shredded teriyaki chicken. Drizzle a bit of sauce from the baking dish on top of the chicken. Sprinkle another 1/4 cup of cheese on top of the sauce and chicken. Fold the tortilla over to cover the filling.
  8. Place two tortillas into the skillet and cook until the tortilla is crispy with brown spots and the cheese is stating to melt. Carefully flip the tortillas over and cook on the other side until crispy with brown spots and the cheese is melted. Repeat with the remaining 2 tortillas.

Notes:
The nutritional info includes all of the teriyaki sauce ingredients, however, you will not use all of the teriyaki sauce. It is hard to tell how much sauce the chicken absorbs while it bakes. So the nutritional info will be less than what is listed.
