Chicken Alfredo meets cajun sausage in this crock pot meal. A creamy and flavorful dinner that I will be making again and again.
If you have a 3-in-one crockpot that can be used as a stove top as well, this meal can be made using only that crock pot. I like this meal even more because the pasta cooks in the crock pot after the chicken is done.
Crock Pot Cajun Chicken and Sausage Alfredo
Ingredients:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts
- black pepper, to taste
- garlic powder, to taste
- 1 pound smoked sausage, cut into 1/4 inch pieces
- 3 cups heavy cream
- 4 cups low sodium chicken broth
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 1/4 teaspoons paprika
- 1 1/2 teaspoons garlic powder
- 3/4 teaspoon black pepper
- 3/4 teaspoon onion powder
- 3/4 teaspoon dried oregano
- 3/4 teaspoon cayenne pepper
- 1/4 teaspoon dried thyme
- 16 ounces penne pasta, uncooked
- 1/2 cup hot water
- 8 ounces shredded parmesan cheese
- black pepper, to taste
Directions:
- Heat olive oil over high heat in either a skillet or using the stove top function of the crock pot.
- Pat the chicken dry with some paper towels and season both sides with black pepper and garlic powder.
- Add the chicken breast to the hot skillet or crock pot and cook until bottom is seared, golden brown, about 3-4 minutes. Flip over and sear on the other side, about 3-4 minutes. Transfer the chicken breasts to the crock pot is cooked in skillet.
- To the crock pot add the sausage, heavy cream, chicken broth, butter, garlic and all of the seasonings.
- Cover the crock pot and cook on low for 4 hours or high for 2-3 minutes or until the chicken is completely cooked.
- Remove the chicken from the crock pot and allow to rest before slicing into strips.
- Stir the hot water into the crock pot and stir in the uncooked pasta.
- Cover the crock pot and cook on high for about 30 minutes or until the pasta is al dente.
- Stir in the parmesan cheese and sliced chicken. Season with additional black pepper is desired.

Notes:
Instead of the individual spices, you can substitute 2 tablespoons cajun seasoning.
