I am always on the look out for easy side dishes. Not only is this side dish easy, but it is so delicious and can be prepared the night before. This dish takes about 10 minutes to prepare and it takes about 45 minutes to bake. So, if I need dinner ready before an hour, I will prepared this dish the night before, except for the bread crumb topping. Then right before baking, prepare and sprinkle on the topping.
Pepper Jack Hash Brown Casserole
Ingredients:
- 30 ounce bag frozen shredded hash browns
- 10.5 ounce can low sodium cream of chicken soup
- 8 ounces pepper jack cheese, shredded
- 1 1/2 cups heavy whipping cream
- 1/2 cup unsalted butter, melted
- 1/2 cup sour cream
- 1 cup grated parmesan cheese, divided
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- black pepper, to taste
Topping
- 1 1/2 cups bread crumbs
- 3 tablespoons unsalted butter, melted
- 8 slices low sodium turkey bacon, cooked and crumbled
- 1 teaspoon paprika
Directions:
- Preheat oven to 400º F. Lightly spray a 9x13 inch baking dish cooking spray.
- In a large bowl, combine the hash browns, soup, pepper jack cheese, heavy cream, butter, sour cream, 1/4 cup grated parmesan cheese, onion powder, garlic powder and black pepper.
- Transfer the potato mixture into the prepared baking dish and smooth into an even layer.
- In a medium, combine the bread crumbs, cooked and crumbled bacon and paprika. Sprinkle the mixture over the potatoes.
- Bake, uncovered, for 45-50 minutes or until hot and bubbly.

Notes:
To prepare the night before follow the directions through step 3 then cover with aluminum foil and refrigerate. When ready to bake complete steps 4 and 5.
