What can I say about these sub sandwiches, besides delicious. Oh yeah I can tell you they are easy.
A meatball sub is something I would never order at a sandwich place. I don't usually speak in absolutes, like always or never, but I can confidently tell you there are a variety of other subs that I would rather order than meatball. Don't get me wrong I love meatballs, but in a sub it not one of my top choices.
You can make your own meatballs for these subs or you can use premade, just as long as you cook them first. I choose to make these subs easy and used frozen meatballs.
Meatball Boats
Ingredients:
- 24 frozen meatballs
- 2 cups marinara sauce
- 8 mini hoagie or sub rolls
- 8 slices mozzarella cheese
- 4 ounces parmesan cheese
Directions:
- Cook the meatballs according to the package directions.
- Adjust oven temp to 350º F.
- If your sub rolls are not already cut, cut an oval into the top of the roll leaving about 1/2 inch at both ends and the sides and do not cut all the way down to the bottom. Use a knife to hallow out the top of the roll.
- Place the rolls onto a baking sheet and place 1 slice of cheese into the middle of each roll.
- Bake for 8 minutes.
- Remove the baking sheet from the oven and spread 2 tablespoons of marinara sauce over the cheese. Place 3 meatballs on top of the sauce. Top the meatballs with desired amount of marinara sauce and sprinkle with parmesan cheese.
- Bake for 6-8 minutes or until the cheese is melted.
