I almost always use brown rice instead of white. With this recipe I started the rice first, then started working on the chicken. From start to finish this chicken was done in less than 30 minutes. That includes making the sauce, dicing and cooking the chicken and putting the chicken and sauce together and letting it simmer to thicken. The brown rice took 55 minutes from start to finish. It's with dishes like this I start to wonder if I should use white rice since it cooks faster.
No matter what type of rice you use, this is an easy chicken dish that has a delicious homemade teriyaki sauce. Cook up a vegetable and you have a complete meal. No need for take out when you have a recipe like this.
Homemade Teriyaki Chicken
Ingredients:
Teriyaki Sauce
- 1/4 cup low sodium soy sauce
- 1 cup water
- 1/4 cup honey
- 1/2 cup brown sugar
- 2 1/2 tablespoons cornstarch
- 1/4 teaspoon ground ginger
- 1/2 teaspoon garlic powder
Chicken
- 1 tablespoon olive oil
- 2 pounds boneless skinless chicken breasts, cut into bite sized pieces
- 1 teaspoon garlic powder
- black pepper, to taste
Directions:
- In a glass measuring cup, pour in the liquid ingredients first, followed by the remaining ingredients. Whisk until well combined and smooth.
- Spray a large skillet with cooking spray and then add in the olive oil. Heat over medium heat.
- Meanwhile, sprinkle the chicken with garlic powder and black pepper. Add the chicken to the hot skillet and cook, stirring often, until completely cooked.
- Pour the teriyaki sauce over the cooked chicken and bring to a simmer. Allow the sauce to simmer until it has thickened to your liking.
- Serve the chicken over rice.
